“Just Ducky” Black Duck Recipe

Since the Red Legs are starting to come down from up north, I thought I would share with you a nice black duck recipe. As I am sure you know, black duck by itself tastes sort of like liver. So, you can always prepare it that way. But here is an easy epicurian delight that I often use for black ducks when I do not have time to prepare and roast the whole bird ( the way they ought to be done).
- Breast out your black duck with skin on and salt and pepper them.
- Put the breasts under broiler for a few minutes until they get brown. I put mine in my iron skillet. Baste them a half-dozen times or so while browning them. (I mix up some ketchup, lemon juice, melted butter and worcestershire sauce for my basting mixture).
- Just before you take then out, sprinkle with paprika.
